*update* My sister tried it earlier and requested it for her birthday cake next month! Up above, Laurie stated that each loaf is supposed to be sliced into 16 slices, but at the top of the recipe it says this recipe makes 16 servings. OMG just made them, oh so good. Freeze individually wrapped sliced in a freezer bag for up to 6 months.

Don’t be scared and don’t add more liquid. I used 3/4 cup of sugar and it was still sweet enough for my family. Chocolate zucchini bread is the perfect way to use up any extra zucchini bread you have laying around. So glad I found your page!

any substitute i can use? Put the batter in a muffin tin and make chocolate zucchini muffins. Sorry to hear it didn’t turn out for you. Parchment paper helped keep it from sticking to the pan, which I do with all quick breads. Suggestions for high altitude? And I bet you’ll make it a priority to have extra zucchini after tasting this recipe! It also tastes really bland and horrible . You can also just microwave the bread a little longer straight from the freezer. This looks great, and I will be making it tomorrow! Bake for 50-60 minutes or until a tester comes out with just a few moist crumbs. Even my zucchini hating toddler gobbled them down and told everyone he got chocolate cupcakes for breakfast! This bread is so very good! I easily get 24 muffins which reduces the points to 3+ pts per muffin. This zucchini bread recipe gets topped with a sprinkling of chocolate chips and then goes in the oven for about 50 minutes. No need for processor. The sugar is a bit higher from the pudding, but there is hardly any fat in it. I will try adding some oil next time.
